If you aren’t a coffee drinker props to you for being OK with going through life without one of THE BEST THINGS IN THE WORLD. If you’re anything like me though, you enjoy a few cups every single day of your existence. There may be crazy times when you just can’t drink it all and where you find yourself with a bit of leftover go-go juice. Don’t you throw that cold java away! At the very least fill an ice cube tray with it and freeze it for amazing iced coffee. I prefer to put in a few more minutes of work and make myself a little leftover coffee mug cake. Make this recipe once and you’ll see exactly where I’m coming from. You can mix it, cook it and have it in your belly in about 5 minutes. Let’s do this!

Tools

  • sifter or fine mesh strainer
  • Tupperware or Ziplock bag big enough to hold a cup of flour
  • mixing bowl
  • microplane or other fine grater
  • your favorite mug

Ingredients

  • 1 cup flour minus 2 tablespoons
  • 2 tablespoons cornstarch
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 tablespoons butter
  • 3 tablespoons sugar
  • 3 tablespoons coffee
  • 1 tablespoon whole milk
  • 1 egg, beaten
  • 1 tablespoon shaved semi sweet chocolate, a pinch more for garnish
  • whipped cream

Directions

  1. Make your #MugLife flour! I keep a container of this tucked away in my cupboard for my #MugLife cakes. These are exactly what they sound like: cakes made in a mug in about 2 minutes in your microwave. #MugLife flour is basically self-rising flour, which is a welcome substitute if you don’t want to bother with making your own. To make #MugLife flour just mix together your AP flour, cornstarch, baking powder and salt and then sift into a Tupperware container or Ziplock bag. Label it! The cornstarch prevents the protein strands in your flour from forming too strong of a bond so you get a nice soft bite. The baking powder helps everything rise beautifully.
  2. Dice the butter and soften it in your microwave. About 15-20 seconds should do it. You don’t want to melt it. In a mixing bowl, cream your butter with the sugar. (Just mix the two with a fork until the butter looks whipped and the sugar is thoroughly incorporated.)
  3. Add the coffee, whole milk and egg and mix into a batter. Add 6 tablespoons of #MugLife flour and incorporate thoroughly. Add the shaved chocolate and mix again. I used semi sweet baking chocolate but feel free to use whatever you have on hand.
  4. Add the batter to your favorite mug and microwave for 1 and a half to 2 minutes. You will see the cake rise like a souffle out of the mug. The cake is done when it is firm to the touch. Keep a close eye on it and don’t overcook it! The second it stops rising it is done.
  5. Top your creation with a little whipped cream. I whip 1/4 heavy cream, with 2 teaspoons of confectioner’s sugar and a few drops of vanilla extract. You are of course welcome to use whipped cream out of a can. This is all about convenience! Finish your coffee mug cake with a sprinkling of shaved chocolate. BAM! Welcome the the #MugLife.
